In a medium sized saucepan, place enough water that it is at least 1.5 inches deep. Bring to a simmer and grab a heat proof bowl that can fit into the saucepan. Place the two egg yolks and 2 tablespoons of cold water into the bowl. wisk the contents while the bowl is in the simmering saucepan. Make sure to wisk continuously at a steady pace. You will want to stop once the contents start to become thick. If the eggs start to scramble in the bowl, take the bowl away from the heat and water. When the consistency is right, stir the eggs for 30 more seconds away from the heat and then place the bowl on the counter.

How to Prepare the Eggs

You will want to pour enough water into a large skillet so it is about 2.5 to 3 inches deep. Bring the water to a simmer and slowly pour an egg yolk into the hot water. You will want to repeat this with all your eggs. Use a fork to poke and poach the eggs and you will know they are done once the white part becomes firm. Use a spatula or spoon with slots to carefully remove the cooks eggs from the water and lace them on a paper towel to remove any excess water.

In another skillet, melt some butter and place your slices of canadian bacon to cook. This is also a great time to toast your english muffins in the toaster. Once you have flipped your canadian bacon pieces and they are slightly browned on each side, place one slice on each half of the toasted english muffin. Take your poached eggs and place them on top of the canadian bacon. Lastly, you will pour the desired amount of hollandaise sauce over the eggs, bacon and muffin. Your eggs benedict are now done and ready to eat!
